Authentic Italian Margherita Pizza Recipe

Ingredients:
For the Dough:

- 1 packet **active dry yeast**

- 1 1/4 cups **warm water**

- 3 1/2 cups **all-purpose flour**

- 2 teaspoons **salt**

- 2 tablespoons **olive oil**

- 1 teaspoon **sugar**

For the Toppings:

- 1 cup **san marzano tomatoes**, crushed

- 2 cloves **garlic**, minced

- 1 tablespoon **extra-virgin olive oil**

- Salt and **black pepper** to taste

- 8 oz **fresh mozzarella cheese**, sliced

- Handful of fresh **basil leaves**

- **Freshly grated Parmesan cheese**, for serving

Instructions:

1. Prepare the Dough:

   - In a small bowl, dissolve the active dry yeast in warm water and let it sit for 5 minutes until foamy.

   - In a large mixing bowl, combine flour, salt, olive oil, and sugar. Pour in the yeast mixture and stir until a dough forms.

   - Knead the dough on a floured surface for 5-7 minutes until smooth. Place it in a lightly oiled bowl, cover with a kitchen towel, and let it rise in a warm place for 1-2 hours until doubled in size.

2. Make the Tomato Sauce:

   - In a saucepan, heat extra-virgin olive oil over medium heat. Add minced garlic and sauté until fragrant.

   - Stir in crushed san marzano tomatoes, salt, and black pepper. Simmer for 15-20 minutes until the sauce thickens. Set aside to cool.

3. Assemble the Pizza:

   - Preheat your oven to 500°F (260°C) with a pizza stone inside if available.

   - Punch down the risen dough and divide it into 4 equal portions. Roll out each portion into a circle on a floured surface.

   - Transfer the rolled-out dough onto a piece of parchment paper.

   - Spread a thin layer of tomato sauce over the dough, leaving a small border.

   - Arrange slices of fresh mozzarella cheese evenly over the sauce.

   - Tear fresh basil leaves and scatter them over the cheese.

4. Bake the Pizza:**

   - Carefully transfer the assembled pizza onto the preheated pizza stone or a baking sheet.

   - Bake in the preheated oven for 10-12 minutes until the crust is golden and the cheese is bubbly.

   - Remove from the oven and sprinkle with freshly grated Parmesan cheese before serving.
